Fazenda Santuário Sul is the "Innovation lab" of fourth-generation Luiz Paulo Dias Pereira Filho from CarmoCoffees.

The starmaya variety represents a massive technological breakthrough. Developed by CIRAD and Ecom, it is the first F1 Hybrid capable of being propagated by seed rather than costly cloning, making elite genetics more accessible.

For this specific lot, the "Natural Fermentation" process amplifies the bean's inherent traits. After being harvested at peak ripeness, the cherries undergo a controlled fermentation period before drying as whole fruit. This technique elevates the typical chocolate base of Carmo de Minas coffee into a complex, multi-layered experience that leans into the tropical and dark-berry spectrum.
